We don’t know what to say here. We all feel pretty helpless. The people at UNICEF seem to know how to help the kids in Ukraine, Gaza & Armenia (amongst, sadly, many other countries). Donate to UNICEF by clicking through this big box here. We’ll be updating our games this year but not much else, sorry.

Mititei (Romanian sausages)

Mititei - Romanian grilled garlic spiced sausages

Mititei or Mici, which translates to “small ones”, are delicious little grilled sausages typically made from a mixture of ground beef, lamb, and pork. Seasoned with garlic, paprika, and other spices, they’re a great addition to any party spread!

This beloved Romanian street food is said to have originated in the southern region of Wallachia in the early 20th century.

WE MADE THIS!

While most recipes typically combine 3 different meats, it’s agreed that you can make it with just 2. What you can’t change is the bicarbonate of soda – this is crucial in giving the sausages their springy texture.

We grilled these outside on the first nice day of the year and the smell was incredible!

We used the suggested ingredients from this recipe but they do list some alternatives – just stick to the right ratios.

TIME: 45 mins + resting overnight / BEST HOT FROM BBQ!

METHOD

1.
You’ll want to make sure the meat is minced twice. If you have a mincer at home, use this! If not, you can use a food processor or a knife to chop it up.

2.
Hand mix the meat with salt and baking soda, then gradually add the broth. Add the spices and garlic and mix for 5-10 minutes.

3.
Cover the bowl and leave in the fridge for at least 6 hours – ideally overnight.

4.
Use wet hands to form the little sausages, aim for 8cm long and 3cm thick.

5.
Grill for 3-4 minutes on each side, for all 4 sides. Barbecue is best!

6.
Serve with yellow mustard for the tastiest little bites.
